In our house obligatory cake for Christmas is a bishop’s bread (Dried fruit bread)! All in the family love nuts and dry fruits so that I am, and this time, made the cake too rich with these ingredients and smells of spices!
A special feature of this cake is that it has no sugar and eggs, so that it is acceptable for vegans!
You can do it and two weeks before Christmas, and store in a cool place (then the flavors combine and you will have for Christmas delicious, healthy and filling cake).
- 2 chopped bananas
- 2/3 cup vegetable milk (almond, oat, coconut)
- ¼ Cup cold-pressed sunflower oil
- juice of 1 orange
- 1-2 soup spoons of honey or Agave syrup – it is not necessary, if desired
- 1 cup coconut flour
- 1 cup whole wheat flour
- ¼ teaspoon Himalayan salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon Ceylon cinnamon
- 2 cups chopped nuts: almonds, walnuts, hazelnuts, cashew nuts (if desired)
- 2 cups roughly chopped dried fruits: apricots, figs, prunes, dates, raisins, cranberries (optional)
* Cup = 2, 5 dl
Preheat the oven to 190 ° c.
Mix bananas, add milk, oil, orange juice, vanilla flavor, as desired honey or agave syrup and mix until you get a liquid mixture.
Sweetener do not need to add because the cake is sweet enough because of of dried fruit contains.
Mix the flour, salt and baking soda. Add the dry ingredients to the liquid mixture and mix. Add the chopped nuts and dried fruit and mix well all. The mixture is dense, and, if necessary, complete the mixing by hand.
A smaller baking pan cover with parchment paper and with a spoon, transfer the mixture to baking pan and align.
Bake for about 40 minutes or until toothpick stabbed in the bread is not dry.
Baked bread leave to cool on the grid about 1 hour.
Make a the dressing so that the water steam melt the cocoa butter, add honey and cocoa powder and mix the everything well. Dressing pour over the bread and sprinkle with chopped leaves of coconut.
Leave the bread in a cool place. Before serving cut the bread into slices.
