Holiday Ferrero Rocher

…aaand, it began! Preparations for the most beautiful time of the year officially started, and the holiday spirit is everywhere around us! You can feel the smell of cinnamon, clove, vanilla and boiled wine.

Everyone are beginning to prepare sweets and cakes for their families and guests with whom they will share joy, happiness and the feeling of warmth of this time of the year.

Make Your family happy and prepare for Them a well known sweet – Ferrero Rocher, but, of course, a healthy version of it. I suggest You to make a double amount of those because they are truly delicious! 😉

  • ½ cup of lightly roasted hazelnuts
  • 2 tablespoons of organic cocoa powder
  • ½ cup of oat flakes
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of homemade honey
  • a pinch of Himalaya salt
  • 1 tablespoon of coconut oil
  • 30 pieces of whole hazelnuts (for a middle of Ferrero bead)
  • roughly milled hazelnuts (for sprinkling)

For a chocolate gazea:

  • 25 g of cocoa butter
  • 2 tablespoons of organic cocoa powder
  • 1 tablespoon of homemade honey

A note; Maple or Agave syrup can be used instead of a homemade honey

*1 cup = 2, 5 dl


Prepečeni lješnjaci

If you are using raw skinned hazelnuts, roast it for about 10 minutes in an oven on a temperature 180 ºC (not longer because they will burn and not taste well).

Take the hazelnuts out of the oven, wrap them in a dishtowel and scrub them with it to take off their husks.

Put roasted hazelnuts in a multipractic and mill them until they become fully chunky. Leave ½ of cup of milled hazelnuts in multipractic; add cococa, oat flakes, salt, vanilla and mix it all together.

Add honey and melted coconut oil and mix it until it becomes clammy and compact. Try with fingers if the dough is good enough for shaping.

Put the dough in the fridge for about half an hour.

Put a few tablespoons of roughly milled hazelnuts in some smaller bowl.

After a half an hour, take the dough out of the fridge and use a spoon to separate small pieces of the dough. Put one whole hazelnut in each piece and make a small beads with hands. I suggest to wash the hands occasionally because the dough is clammy, so it will stick to palms and it will be harder to shape it.

Cover the beads in a roughly milled hazelnut and put them on a greaseproof paper; and then put it in the freezer for about an hour.

Make a chocolate glaze; melt a cocoa butter on a steam, then add honey and cocoa powder, and mix it well.

Take the beads out of the freezer. Dip every bead into the chocolate glaze which will froze because the beads are frozen too. If you prefer, you can leave few beads without the chocolate gaze.

Put the Ferrero Rocher beads in the fridge, and before serving, you can place each Ferrero in some decorative paper cupcake liner.
