It’s well known that the peanut is extremely rich in nutrients, vitamins and fibers. It decreases a level of cholesterol, controls sugar level in your blood, contains healthy fats, regulates digestion, and so on. It’s also very easy to make the praised and valued peanut butter of it, and you can make numerous different healthy snacks and sweets of peanut butter. - 6 tablespoons peanut butter
- 5 tablespoons coconut flour
- 3 tablespoons roughly milled almonds
- 3 tablespoons oat flakes
- 2 tablespoons homemade honey or Agave syrup
- 3 tablespoons freshly squeezed orange juice
- 1 teaspoon vanilla extract
- a pinch of Himalaya salt
For a chocolate dressing:
- 25 g cocoa butter
- 2 tablespoons organic cocoa powder
- 1 teaspoon homemade honey
You can make your own peanut butter at home; put the peanut on the greaseproof paper in one layer and asperse it lightly with water (so it doesn’t burn when roasting), then roast it in the preheated oven at 200 º C for about 15 minutes.
You can recognize that the peanut is well baked when the colour of peanut is light brown.
Leave it for a few moments to cool a little bit, then blend it in some stronger blender (with two blades). Add a pinch of Himalaya salt. (In a few recipes online, they recomend you to add a little bit of oil, but I avoided this and still, after a few minutes of blending, got a very quality, homemade peanut butter).
Put all ingredients (peanut butter, coconut flour, milled almonds, oat flakes, honey or Agave syrup, orange juice and vanilla extract) and mix it until you get a compact dough that can be easily shaped.
Put the dough in the fridge for about a half an hour.
Use a spoon to separate small pieces of the dough for shaping cookies as you prefer; you can make small bolls or any other shape of it, or you can use a silicone molds for shaping.
Put the cookies into the frezzer for an hour.
Make the chocolate dressing; melt the cocoa butter on a steam; add honey and cocoa powder, and mix it well.
Take the cookies out of the freezer and decorate it with the chocolate dressing as you wish. You can also sprinkle it with chopped coconut, milled hazelnuts, …
Keep the cookies in some cold room (if You don’t eat it eventually J ).
